- 6 whole chicken breasts
- 2 lb. fresh broccoli or 4 (10 oz.) pkg. frozen broccoli
- 1/2 c. butter
- 1/2 c. flour
- 3 c. chicken broth (from boiling the chicken)
- 1/3 c. sherry
- 1 tsp. salt
- dash of nutmeg
- 1/2 c. mayonnaise
- 1 c. Parmesan cheese
- 1/2 c. whipping cream
Method
- Simmer chicken, covered with water (salt and pepper) 30 to 45 minutes until tender.
- Drain and chill.
- Remove bones.
- Slice each breast into 3 pieces lengthwise.
