Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion, minced
  • 2 or 3 cloves garlic
  • 1 large can stewed tomatoes
  • 3 boneless chicken breast
  • 1/4 c. white wine
  • 1 small can sliced black olives
  • 1 small jar spaghetti sauce
  • 5 or 6 leaves fresh basil, chopped

Method

  • Slice bell peppers in rings and cut into bite-size pieces; set aside. Chop onion fine; set aside.
  • Cut chicken breasts in bite-size pieces.
  • Saut chicken in small amount of olive oil. Add red and green peppers and onion in skillet and saut.
  • Add tomatoes, garlic, wine and olives. Simmer for 20 minutes. Add spaghetti sauce and simmer another 20 minutes.
