Ingredients

  • A whole chicken (about 1.5kg)
  • plain flour
  • salt and pepper
  • 2 tbsp olive oil
  • 1 clove garlic (crushed)
  • 400g can chopped tomatoes
  • 1/2 cup white wine
  • 1 tbsp tomato paste
  • 12 button mushrooms
  • flat-leaf parsley leaves (coarsely chopped)
  • crusty bread

Method

Cut a whole chicken (about 1.5kg) into four pieces, dust lightly with plain flour and season with salt and pepper. Cook chicken pieces in a large pan with 2 tbsp olive oil over medium heat until well browned. Add 1 clove garlic (crushed) and 400g can chopped tomatoes and simmer. Add 1/2 cup white wine and 1 tbsp tomato paste and bring to the boil, then reduce heat and simmer for 15 minutes. Add 12 button mushrooms and simmer for a further 5 minutes or until chicken is cooked. Serve chicken scattered with a handful of flat-leaf parsley leaves (coarsely chopped) and crusty bread.
