Ingredients

  • 1.5 chicken breasts ($1.50) or leftover chicken from previous meal (free!)
  • 4 tortillas ($.75)
  • 1 Can Rotel diced tomatoes with green chilis ($.65) or use fresh tomatoes and add salsa
  • 1/2 onion, chopped ($.30)
  • 1 cup milk ($.20)
  • 1 cup shredded cheddar cheese ($.85)
  • 4 corn cobs ($1 in August!)
  • 2 T butter ($.20)

Method

  • Cut chicken breast into cubes. Begin to boil in 1 qt of water. Add Rotel tomatoes, onion, milk and cheese. Let simmer an hour. About 10 minutes before serving, add torn tortillas to soup.
  • Cook corn and serve HOT with butter!
