Ingredients

  • 4 boneless skinless chicken breasts
  • 1 12 cups Mexican blend cheese
  • 2 ounces rotel, with liquid
  • 34 cup sour cream
  • 14 cup breadcrumbs
  • olive oil

Method

  • Preheat oven to 375 degrees.
  • Mix cheese, Rotel and sour cream in a small bowl.
  • Pour breadcrumbs into a shallow pan or dish.
  • Flatten chicken breasts to approximately 1/4 inch thickness.
  • Place 1/4 of cheese mixture onto each chicken breast, starting with small end, roll tight and secure with toothpicks.
  • Dredge each roll in breadcrumbs.
  • Place in baking dish and drizzle with olive oil.
  • Bake, uncovered, for 35 to 40 minutes or until chicken is no longer pink and starts to brown.
  • If prefered, sprinkle with more cheese and broil for 3 to 5 minutes until cheese is bubbly.
  • Serve with salsa, sour cream, cheese -- Enjoy!
