- 2 (8 oz.) pkg. cream cheese
- 4 eggs, separated
- 1 c. sugar
- 1 Tbsp. cornstarch
- 1 tsp. baking powder
- 1 tsp. grated lemon rind
- 1 tsp. lemon juice
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1/2 c. butter
- 2 graham cracker pie shells
Method
- Beat 1/2 cup butter with cream cheese and egg yolks until smooth and creamy.
- Add sugar, cornstarch, baking powder, lemon rind, lemon juice and vanilla.
- Mix until well blended.
- Beat egg whites with salt until soft peaks form.
- Fold egg whites into creamed mixture and turn into pie shells.
- Bake at 325° for 50 to 60 minutes or until center feels firm to the touch.
- If desired, fill with pie filling of your choice.
