Ingredients

  • 2 (8 oz.) pkg. cream cheese
  • 4 eggs, separated
  • 1 c. sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. baking powder
  • 1 tsp. grated lemon rind
  • 1 tsp. lemon juice
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1/2 c. butter
  • 2 graham cracker pie shells

Method

  • Beat 1/2 cup butter with cream cheese and egg yolks until smooth and creamy.
  • Add sugar, cornstarch, baking powder, lemon rind, lemon juice and vanilla.
  • Mix until well blended.
  • Beat egg whites with salt until soft peaks form.
  • Fold egg whites into creamed mixture and turn into pie shells.
  • Bake at 325° for 50 to 60 minutes or until center feels firm to the touch.
  • If desired, fill with pie filling of your choice.
