Ingredients

  • 3/4 c. seasoned bread crumbs
  • 1/2 c. grated cheese
  • 6 chicken breasts
  • 1/2 c. sliced green onions
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1 c. lowfat milk
  • 1 (10 ounce.) pkg. minced spinach, thawed and liquid removed
  • 4 ounce. diced ham

Method

  • Combine bread crumbs and cheese.
  • Dip chicken breasts in crumbs to coat.
  • Arrange in baking dish.
  • Set remaining crumbs aside.
  • Cook onion in butter till tender.
  • Blend in flour, stir in lowfat milk.
  • Cook and stir till thickened and bubbly.
  • Cook and stir one minute more.
  • Stir in spinach and ham.
  • Spoon spinach mix over chicken.
  • Sprinkle with bread crumbs.
  • Bake uncovered in 350 degrees oven for 40 to 45 min or possibly till done.
  • (Can also use turkey cutlets or possibly fish fillets).
