Ingredients
- 3/4 c. seasoned bread crumbs
- 1/2 c. grated cheese
- 6 chicken breasts
- 1/2 c. sliced green onions
- 2 tbsp. butter
- 2 tbsp. flour
- 1 c. lowfat milk
- 1 (10 ounce.) pkg. minced spinach, thawed and liquid removed
- 4 ounce. diced ham
Method
- Combine bread crumbs and cheese.
- Dip chicken breasts in crumbs to coat.
- Arrange in baking dish.
- Set remaining crumbs aside.
- Cook onion in butter till tender.
- Blend in flour, stir in lowfat milk.
- Cook and stir till thickened and bubbly.
- Cook and stir one minute more.
- Stir in spinach and ham.
- Spoon spinach mix over chicken.
- Sprinkle with bread crumbs.
- Bake uncovered in 350 degrees oven for 40 to 45 min or possibly till done.
- (Can also use turkey cutlets or possibly fish fillets).
