Ingredients

  • 1 to 2 lb. ground beef
  • 1 medium onion, chopped
  • 1 c. brown rice
  • 1 (46 oz.) can vegetable juice
  • 1 (15 oz.) can light red kidney beans
  • 1 (15 oz.) can carrots, drained
  • 1 (14.5 oz.) can stewed tomatoes
  • 2 to 3 Tbsp. chili powder
  • 1 tsp. black pepper
  • 1/2 tsp. garlic powder (optional)

Method

  • Cook rice separately in 2 cups of water.
  • Brown meat and onion together in a large soup pot.
  • Drain off grease.
  • Add cooked rice, vegetable juice, kidney beans, carrots, tomatoes, chili powder, pepper and garlic to meat and onions in a large pot.
  • Bring to boil.
  • Serve.
  • Makes a meal for 6 people.
  • Goes well with cornbread.
