- 1 to 2 lb. ground beef
- 1 medium onion, chopped
- 1 c. brown rice
- 1 (46 oz.) can vegetable juice
- 1 (15 oz.) can light red kidney beans
- 1 (15 oz.) can carrots, drained
- 1 (14.5 oz.) can stewed tomatoes
- 2 to 3 Tbsp. chili powder
- 1 tsp. black pepper
- 1/2 tsp. garlic powder (optional)
Method
- Cook rice separately in 2 cups of water.
- Brown meat and onion together in a large soup pot.
- Drain off grease.
- Add cooked rice, vegetable juice, kidney beans, carrots, tomatoes, chili powder, pepper and garlic to meat and onions in a large pot.
- Bring to boil.
- Serve.
- Makes a meal for 6 people.
- Goes well with cornbread.
