Ingredients

  • 4 Chicken drumettes - the first (thickest) joint of a chicken wing
  • 1 pack Maitake mushrooms
  • 1/2 Onion (large)
  • 1/2 Tomatoes (large)
  • 1 tabespoon Goji berries
  • 200 ml Water
  • 1 tsp Salt
  • 1 pinch Black pepper
  • 2 tsp Soy sauce
  • 1 Dried herbs (marjoram, oregano)
  • 1 Fresh parsley
  • 1 tbsp Olive oil

Method

  • These are the dried goji berries.
  • You can also use them dried in desserts.
  • I used these for this simmered dish.
  • Season the chicken drumsticks with the dried herbs, salt, and pepper.
  • Marjoram helps with digestion.
  • Cut the onion into 5mm slices.
  • Wash and tear apart the maitake.
  • Chop the tomatoes.
  • You can leave the skin on or peel, whichever you prefer.
  • Heat olive oil in an enamel pot.
  • Add the chicken drumsticks and cook lightly.
  • When the chicken begins to lightly change color, add the water.
  • Cover with a lid and leave it until it begins to boil.
  • Once it begins to boil, drop the heat to low.
  • Add, in order, the tomato, maitake mushrooms, and goji berries.
  • Cover with a lid and simmer for 15-20 minutes.
  • Season with salt, pepper, and soy sauce.
  • Stop the heat and let it steam for a short time to finish.
  • Garnish with digestion aiding and mineral filled parsley and then enjoy.
  • The chicken will become so tender and delicious.
  • You can also enjoy the goji berries.
