Ingredients
- 1 1/2 lb. medium-sized red potatoes
- 2 tbsp. olive or salad oil
- 1/2 tsp. salt
Method
- Cut potatoes into 1 1/2-inch chunks.
- In nonstick 12-inch skillet over medium-high heat, in hot olive or salad oil, cook potatoes and salt until potatoes are golden brown, turning them occasionally.
- Reduce heat to medium; cover skillet and continue cooking until potatoes are fork-tender.
