- 14 ounces mixed beans rinsed
- 14 ounces tuna in water, drained and flaked
- 1/2 pound cherry tomatoes halved
- 2 mini cucumbers chopped
- 1/2 red onion finely chopped
- 2 stalks celery thinly sliced
- 3 ounces roasted red peppers, drained and chopped
- 1/3 cup low fat french dressing
- 1 head butter lettuce washed, leaves separated
- crusty bread to serve
Method
- For the tuna salad, add all ingredients except for the lettuce and bread to a large bowl and toss gently.
- Arrange the lettuce leaves on a serving platter and top with the tuna salad. Serve with the bread.
