Ingredients

  • 14 ounces mixed beans rinsed
  • 14 ounces tuna in water, drained and flaked
  • 1/2 pound cherry tomatoes halved
  • 2 mini cucumbers chopped
  • 1/2 red onion finely chopped
  • 2 stalks celery thinly sliced
  • 3 ounces roasted red peppers, drained and chopped
  • 1/3 cup low fat french dressing
  • 1 head butter lettuce washed, leaves separated
  • crusty bread to serve

Method

  • For the tuna salad, add all ingredients except for the lettuce and bread to a large bowl and toss gently.
  • Arrange the lettuce leaves on a serving platter and top with the tuna salad. Serve with the bread.
