Ingredients

  • 2 tablespoons vegetable oil
  • 1 onions medium, chopped
  • 1 pound pork tenderloin
  • 1 knorr homestyl stock chicken tub
  • 1 jalapeno chilies seeded, if desired, and chopped
  • 2 cloves garlic
  • 15 1/2 ounces cannellini or white kidney beans, rinsed and drained
  • 2 cups water
  • 4 ounces chopped green chilies undrained

Method

  • Heat oil in 4-quart saucepan over medium-high heat and cook onion and jalapeno pepper, stirring frequently, until onion is tender, about 4 minutes. Stir in garlic and cook 1 minute. Add chicken and cook, stirring frequently, until chicken is almost cooked, about 4 minutes. Stir in water, beans, chilies and Knorr(R) Homestyle Stock - Chicken, stirring until Stock is melted. Bring to a boil over high heat.
  • Garnish, if desired, with shredded cheddar cheese, sour cream, chopped cilantro and/or lime wedges.
  • Reduce heat to low and simmer, stirring occasionally, until chicken is thoroughly cooked, about 10 minutes.
