- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 2 teaspoons Dijon mustard
- 1 lb lump crabmeat or 1 lb imitation crabmeat
- 1/3 cup red bell pepper, diced
- 1/3 cup yellow bell pepper, diced
- 1/4 cup chives
- 1/4 cup parsley
- salt
- pepper
- 8 cups salad greens
Method
- Combine mayonnaise, lemon juice and mustard. Fold in crabmeat, peppers, chives, parsley, salt and pepper.
- Divide salad greens among 4 bowls and top with crab mixture.
