Ingredients

  • 6 thawed Cornish hens
  • 1 small box long grain wild rice
  • 1 small box quick rice
  • 1/2 tsp. celery salt
  • 1 Tbsp. parsley flakes
  • whipped margarine to coat hens
  • 1 1/4 Tbsp. minced onion
  • 5 Tbsp. butter
  • 2 eggs, beaten
  • salt and pepper
  • 1 tsp. minced garlic

Method

  • Cook rice as directed on box and drain.
  • Combine rice and the following:
  • onion, 1/2 teaspoon celery salt and parsley.
  • Then add butter, eggs, garlic, salt and pepper to taste.
  • Mix well and stuff hens with rice mixture.
  • Place extra rice on bottom of large, deep baking pan.
  • Arrange hens on top of rice and coat hens generously with whipped margarine.
  • Sprinkle lightly with additional salt, minced garlic, minced onion and parsley flakes. Bake 1 hour in 375° oven.
  • Keep hens moist by basting with prepared Orange Sauce.
