Ingredients
- 250 g All purpose flour
- 150 g granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 250 ml milk
- 60 g unsalted butter
- 1 tsp vanilla extract
- 3/4 c cranberries (blueberries)
- 1 Tbsp lemon zest
Method
- Sift dry ingredients together
- Stir liquid ingredients including butter
- Stir liquid mix into dry ingredients, DO NOT OVERMIX, batter should be lumpy
- Gently fold cranberries and lemon zest
- Portion into greased mold or paper lined muffin cups
- Bake 350F (180C) for 18 min until light brown and set on center
- Cool on rack in the pan for several minutes before removing.
