Ingredients

  • 250 g All purpose flour
  • 150 g granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 250 ml milk
  • 60 g unsalted butter
  • 1 tsp vanilla extract
  • 3/4 c cranberries (blueberries)
  • 1 Tbsp lemon zest

Method

  • Sift dry ingredients together
  • Stir liquid ingredients including butter
  • Stir liquid mix into dry ingredients, DO NOT OVERMIX, batter should be lumpy
  • Gently fold cranberries and lemon zest
  • Portion into greased mold or paper lined muffin cups
  • Bake 350F (180C) for 18 min until light brown and set on center
  • Cool on rack in the pan for several minutes before removing.
