Ingredients

  • 3 c. all-purpose flour
  • 1/4 c. sugar
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. butter or margarine
  • 1 c. fresh or frozen cranberries, chopped
  • 1/2 c. buttermilk
  • 1/3 c. fresh orange juice
  • 1 tsp. grated orange peel
  • 1 tsp. vanilla extract
  • 1 large egg

Method

  • Heat oven to 350°. Grease a
  • 9 x 5-inch loaf pan. Combine flour, sugar, baking powder, baking soda and salt in a bowl. With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in berries. Whisk together buttermilk, orange juice, orange peel, vanilla and egg until blended. Stir into flour mixture just until dry ingredients are moistened. Spoon batter evenly into prepared pan. Bake 65 minutes until toothpick inserted in center comes out clean. Remove from pan immediately; cool.
