Ingredients

  • 25 g butter
  • 100 g shiitake mushrooms, washed and sliced
  • 25 g plain flour
  • 250 ml vegetable stock
  • 250 g cream
  • 1/2 bunch chives, finely chopped
  • None None red peppercorns, for garnish

Method

  • Heat the butter in a saucepan and fry the mushrooms for about 5 minutes. Season with salt and pepper, dust with flour then add the stock and cream and bring to the boil.
  • Simmer for about 10 minutes then add the chives, saving some for garnish and serve. Garnish with leftover chives and ground red peppercorns.
