Ingredients
- 25 g butter
- 100 g shiitake mushrooms, washed and sliced
- 25 g plain flour
- 250 ml vegetable stock
- 250 g cream
- 1/2 bunch chives, finely chopped
- None None red peppercorns, for garnish
Method
- Heat the butter in a saucepan and fry the mushrooms for about 5 minutes. Season with salt and pepper, dust with flour then add the stock and cream and bring to the boil.
- Simmer for about 10 minutes then add the chives, saving some for garnish and serve. Garnish with leftover chives and ground red peppercorns.
