Ingredients
- 2 1/2 c sugar
- 1/2 c light corn syrup
- 1/2 c water
- 2 egg whites
- 1 tsp. vanilla
- 1/4 tsp. salt
Method
- In heavy (2-quart) saucepan, combine sugar, corn syrup, water and salt.
- Cook and stir until sugar dissolves and mixture boils. Cook over medium heat (candy thermometer reaches 250, hard boil stage), without stirring and bubbling over entire surface.
- As temperature nears 250, beat egg whites to stiff peaks.
- Gradually pour hot syrup in thin stream over egg whites, beating at high speed; beat 4-5 minutes more until mixture holds its shape.
- Drop by teaspoonfuls onto waxed paper or spread in buttered 10x6 inch dish.
- Cool and cut into squares.
- Makes 3 dozen pieces.
- May add candied cherries or chopped nuts after 5 minutes beating time.
