Ingredients

  • 1 medium eggplant
  • 3 Tbsp. butter
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped onion
  • 2 c. cooked or canned tomatoes
  • 1 tsp. salt
  • dash of pepper
  • 3/4 c. bread crumbs
  • 1/4 c. grated sharp cheese

Method

  • Pare eggplant and cut into small pieces.
  • Melt 2 tablespoons butter and add green pepper and onion.
  • Brown.
  • Add tomatoes, salt, pepper and eggplant.
  • Simmer 10 minutes.
  • Pour in baking dish.
  • Melt remaining butter.
  • Mix in bread crumbs.
  • Spread over top.
  • Add cheese and bake at 350° for 20 minutes.
