Ingredients
- 1 medium eggplant
- 3 Tbsp. butter
- 2 Tbsp. chopped green pepper
- 2 Tbsp. chopped onion
- 2 c. cooked or canned tomatoes
- 1 tsp. salt
- dash of pepper
- 3/4 c. bread crumbs
- 1/4 c. grated sharp cheese
Method
- Pare eggplant and cut into small pieces.
- Melt 2 tablespoons butter and add green pepper and onion.
- Brown.
- Add tomatoes, salt, pepper and eggplant.
- Simmer 10 minutes.
- Pour in baking dish.
- Melt remaining butter.
- Mix in bread crumbs.
- Spread over top.
- Add cheese and bake at 350° for 20 minutes.
