Ingredients

  • 1 c. diced Canadian bacon or 1/2 small roll sausage (4 to 8 oz.)
  • 1/4 c. chopped green onion
  • 7 Tbsp. butter or margarine (divided use)
  • 12 beaten eggs
  • 1 (3 oz.) can mushroom stems and pieces, drained
  • 1 recipe Cheese Sauce (recipe follows)
  • 2 1/4 c. soft bread crumbs (3 slices)
  • 1/8 tsp. paprika

Method

  • In large skillet, cook bacon or sausage and onion in 3 tablespoons butter or margarine until onion is tender, but not brown.
  • Add eggs and scramble just until set.
  • Fold mushrooms and cooked eggs into Cheese Sauce.
  • Turn into a 12 x 7 x 2-inch baking dish.
  • Combine remaining melted butter, crumbs and paprika; sprinkle atop eggs.
  • Cover; chill until 30 minutes before serving (can refrigerate overnight).
  • Bake, uncovered in a 350° oven for 30 minutes.
  • Makes 10 servings.
