Ingredients

  • 2 lb. fresh fish (haddock or snapper)
  • 2 limes
  • salt and pepper
  • 4 Tbsp. olive oil
  • 2 medium onions, sliced
  • 1 to 2 cloves garlic
  • 2 c. tomato puree
  • 1/2 c. water
  • 6 stuffed green olives, sliced
  • 1/2 c. capers
  • 2 pickled jalapeno chilli peppers, chopped fine

Method

  • Marinate fish in lime juice.
  • Salt and pepper to taste.
  • Turn a couple of times.
  • Remove, pat dry.
  • Brown in olive oil.
  • Remove from pan.
  • Add to pan, onions and garlic; fry until brown.
  • Add tomato puree, water, olives, capers and chilli peppers and cook covered for 10 minutes.
  • Add fish and spoon sauce over it.
  • Cook 7 to 10 minutes longer.
  • Serves 6.
