- 2 lb. fresh fish (haddock or snapper)
- 2 limes
- salt and pepper
- 4 Tbsp. olive oil
- 2 medium onions, sliced
- 1 to 2 cloves garlic
- 2 c. tomato puree
- 1/2 c. water
- 6 stuffed green olives, sliced
- 1/2 c. capers
- 2 pickled jalapeno chilli peppers, chopped fine
Method
- Marinate fish in lime juice.
- Salt and pepper to taste.
- Turn a couple of times.
- Remove, pat dry.
- Brown in olive oil.
- Remove from pan.
- Add to pan, onions and garlic; fry until brown.
- Add tomato puree, water, olives, capers and chilli peppers and cook covered for 10 minutes.
- Add fish and spoon sauce over it.
- Cook 7 to 10 minutes longer.
- Serves 6.
