Ingredients

  • 3 Tbsp. Olive Oil
  • 16 oz. Can Corn (Drained)
  • 1 Red Bell Pepper, chopped
  • 1/2 Red Onion, chopped
  • 3 Cloves Garlic, chopped
  • 16 oz. Can Black Beans
  • 16 oz. Can Garbonzo Beans (Drained)
  • 1 Can Jalapenos(Chopped)(Can size depending on degree spice you like)
  • 2 Tbsp. Lime Juice
  • 1 Tbsp. Chili Powder
  • 1 Tbsp. Red Pepper
  • 1 tsp. Oregano
  • 1 1/2 tsp. Cumin

Method

  • 1. Brown the corn with the olive oil, do not burn or the corn will pop and make a mess.
  • Add the red pepper, onion, garlic and brown lightly. 2. Add the beans, jalapenos (if desired), lime juice, and spices.
  • Bring to a light simmer. 3. Warm large flour tortillas in a microwave.
  • While warm roll burritos on plate. Cover with sharp cheddar cheese and bake in oven or microwave to melt cheese.
  • Serve with chips and a cold Corona beer.
