Ingredients
- 1/4 c. butter
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 6 c. bread cubes
- 1/2 tsp. thyme
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 c. peeled, chopped apples
- 1 c. chopped, dried apricots
Method
- Roast goose 1 hour at 400°, then prick skin.
- Reduce heat to 350° for 1 to 2 hours.
- Skim off excess fat as it accumulates.
