Ingredients

  • 1 box yellow cake mix
  • 1 large can crushed pineapple
  • 3/4 c. sugar
  • 1 pkg. instant vanilla or pineapple pudding mix
  • 1 (12 oz.) Cool Whip
  • 1 (12 oz.) frozen coconut
  • 1 c. chopped nuts (pecans or walnuts)

Method

  • Prepare cake mix according to directions.
  • While cake is baking, boil the pineapple and sugar.
  • Puncture cake with fork after baking, pour over pineapple mixture. Let cake cool. Prepare pudding mix according to directions.
  • Spread on cool cake. Let cake completely cool, then spread on Cool Whip.
  • Sprinkle with coconut and nuts.
  • The longer this cake sets, the better it gets.
  • Let set at least 2 or 3 days.
  • Bake in 9 x 13-inch pan.
