Ingredients
- 1 box yellow cake mix
- 1 large can crushed pineapple
- 3/4 c. sugar
- 1 pkg. instant vanilla or pineapple pudding mix
- 1 (12 oz.) Cool Whip
- 1 (12 oz.) frozen coconut
- 1 c. chopped nuts (pecans or walnuts)
Method
- Prepare cake mix according to directions.
- While cake is baking, boil the pineapple and sugar.
- Puncture cake with fork after baking, pour over pineapple mixture. Let cake cool. Prepare pudding mix according to directions.
- Spread on cool cake. Let cake completely cool, then spread on Cool Whip.
- Sprinkle with coconut and nuts.
- The longer this cake sets, the better it gets.
- Let set at least 2 or 3 days.
- Bake in 9 x 13-inch pan.
