Ingredients

  • 2 lb. pkg. lima beans
  • ham to taste
  • 1 small onion
  • 1/2 box brown sugar
  • 1 jar chili sauce

Method

  • Wash beans with cold water.
  • Place beans in kettle and cover with water.
  • After it comes to a boil, put in a pinch of baking soda.
  • Parboil until not white, about 10 minutes (being careful that skins of beans don't start coming off).
  • Drain.
  • Put beans in roasting pan with ham, salt and pepper, small onion (quartered and sliced), brown sugar and water just to cover beans.
  • Bake until water cooks down a little at 325°.
  • Add chili sauce; continue baking until beans are tender and sauce slightly thickened.
