Ingredients
- 1/2 c. butter, melted
- 2 tbsp. minced fresh chives
- 2 tbsp. minced fresh parsley
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon fine herbs
- 4 1/2 pound potatoes, unpeeled and cut into 1/4 inch slices
- Grated Parmesan cheese
Method
- Combine first 7 ingredients in a large bowl; add in potatoes, tossing to coat.
- Cover and bake at 425 degrees for 1 hour, stirring at 15 min intervals.
- Top with Parmesan cheese.
- Serves 12.
