Ingredients
- 1 Tbsp. olive oil
- 3 (12 oz.) boneless chicken breasts
- 1 medium zucchini squash
- 1 green pepper
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp. fresh or dried cilantro
- 2 tsp. chili powder
- 6 (6-inch) flour tortillas
Method
- Cut zucchini and pepper into strips.
- Remove skin from chicken and cut into strips.
- Heat the oil in a skillet and fry the chicken strips over medium heat until chicken turns white.
- Add the remaining ingredients except tortillas and stir-fry until vegetables are crisp-tender, about 5 minutes.
- Divide the mixture evenly into 6 servings.
- Place a serving of chicken mixture in center of each tortilla.
- Fold over in half to form the fajita. Serve with fresh salsa.
