Ingredients

  • 1 Tbsp. olive oil
  • 3 (12 oz.) boneless chicken breasts
  • 1 medium zucchini squash
  • 1 green pepper
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp. fresh or dried cilantro
  • 2 tsp. chili powder
  • 6 (6-inch) flour tortillas

Method

  • Cut zucchini and pepper into strips.
  • Remove skin from chicken and cut into strips.
  • Heat the oil in a skillet and fry the chicken strips over medium heat until chicken turns white.
  • Add the remaining ingredients except tortillas and stir-fry until vegetables are crisp-tender, about 5 minutes.
  • Divide the mixture evenly into 6 servings.
  • Place a serving of chicken mixture in center of each tortilla.
  • Fold over in half to form the fajita. Serve with fresh salsa.
