Ingredients
- 2 slices thick white bread
- 200 g (6 1/2 oz) feta cheese
- 1 clove garlic, crushed
- 1 tablespoon finely chopped fresh marjoram
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon finely chopped fresh basil
- 2 tablespoons white wine vinegar
- 1/3 cup (80 ml/2 3/4 fl oz) olive oil
- 1 red coral lettuce
- 1 butter, coral or oak-leaf lettuce
Method
1. Preheat oven to moderate 180°C (350°F/Gas 4). Remove crusts from bread and cut bread into cubes. Place on an oven tray in a single layer; bake for 10 minutes, or until crisp and lightly golden; cool completely.
2. Cut feta into small cubes; place in a bowl. Combine garlic, marjoram, chives, basil, vinegar and oil in small screw-top jar and shake for 30 seconds. Pour over feta and cover with plastic wrap. Leave for at least 30 minutes, stirring occasionally. Wash and dry lettuces. Tear leaves into pieces and place in a bowl. Add feta with dressing, and bread cubes; toss.
