Ingredients
- 4 large ripe tomatoes
- 1/2 c. cooking oil
- 1/4 c. vinegar
- 1/4 c. chopped parsley
- 1/4 c. sliced green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried thyme or marjoram
Method
- Slice tomatoes, place in flat dish.
- Combine remaining ingredients and shake well. Pour over tomatoes.
- Cover and chill for several hours or overnight.
- At serving time, transfer tomato slices to platter.
- Sprinkle with chopped parsley.
