Ingredients

  • FOR THE CUPCAKES:
  • 1 cup Butter
  • 2 cups Sugar
  • 4 whole Eggs
  • 2 Tablespoons Vanilla Extract
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 2/3 cups Milk
  • 1/3 cups Sprinkles Plus More For Garnish If Desired
  • FOR THE BUTTERCREAM:
  • 4 sticks Butter, Softened
  • 4-1/2 cups Powdered Sugar
  • 2 Tablespoons Vanilla Extract
  • 1 Tablespoon Milk (only If Needed To Thin Frosting)

Method

  • Cupcakes:
  • Preheat oven to 350 degrees F.
  • Cream together the butter and sugar until fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Add vanilla and beat until combined.
  • Combine flour and baking powder in a bowl. Add half of the dry ingredients into the creamed mixture, mixing until just combined.
  • Add the milk and once mixed, add remaining dry ingredients.
  • Fold in assorted sprinkles.
  • Pour batter into cupcake tins and fill 2/3 of the way full.
  • Bake for 18-20 minutes.
  • Let cool and then frost.
  • Frosting:
  • Cream butter until completely smooth and creamy.
  • Slowly add in powdered sugar and once it is all added, increase mixer speed and add vanilla.
  • Scrape down sides of bowl and beat on medium to high for 2-3 minutes.
  • If the frosting consistency is too thick, slowly add a LITTLE (1 Tablespoon or less) milk until desired consistency is reached.
  • Decorate cupcakes with frosting and sprinkles and ENJOY!
