Ingredients
- FOR THE CUPCAKES:
- 1 cup Butter
- 2 cups Sugar
- 4 whole Eggs
- 2 Tablespoons Vanilla Extract
- 3 cups Flour
- 2 teaspoons Baking Powder
- 2/3 cups Milk
- 1/3 cups Sprinkles Plus More For Garnish If Desired
- FOR THE BUTTERCREAM:
- 4 sticks Butter, Softened
- 4-1/2 cups Powdered Sugar
- 2 Tablespoons Vanilla Extract
- 1 Tablespoon Milk (only If Needed To Thin Frosting)
Method
- Cupcakes:
- Preheat oven to 350 degrees F.
- Cream together the butter and sugar until fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition. Add vanilla and beat until combined.
- Combine flour and baking powder in a bowl. Add half of the dry ingredients into the creamed mixture, mixing until just combined.
- Add the milk and once mixed, add remaining dry ingredients.
- Fold in assorted sprinkles.
- Pour batter into cupcake tins and fill 2/3 of the way full.
- Bake for 18-20 minutes.
- Let cool and then frost.
- Frosting:
- Cream butter until completely smooth and creamy.
- Slowly add in powdered sugar and once it is all added, increase mixer speed and add vanilla.
- Scrape down sides of bowl and beat on medium to high for 2-3 minutes.
- If the frosting consistency is too thick, slowly add a LITTLE (1 Tablespoon or less) milk until desired consistency is reached.
- Decorate cupcakes with frosting and sprinkles and ENJOY!
