Ingredients

  • 2 Tablespoons Vegetable Oil
  • 1 cup Sliced Celery
  • 1 whole Yellow Onion, Diced
  • 1 cup Sliced Carrots
  • 1/2 pieces Turkey Carcass, Leftover From Thanksgiving
  • 8 cups Water
  • 2 pieces Bay Leaves
  • 1-1/2 teaspoon Salt
  • 1/2 teaspoons Pepper
  • 1/2 teaspoons Celery Salt
  • 1/2 teaspoons Ground Sage
  • 1/2 teaspoons Rosemary
  • 1/2 teaspoons Oregano
  • 1/2 cups White Rice (not Instant)

Method

  • In stock pot add vegetable oil and all the chopped veggies. Cook on medium heat for about 10 minutes. Add turkey carcass, water and all the seasonings (not the rice yet). On medium heat, simmer for 3 hours. During the simmering, the broth will reduce; if needed, add more water.
  • Take turkey carcass out, let cool, remove all meat from carcass and chop then return to the pot. Add rice and simmer for another 30 minutes or until rice is just done. I serve my homemade favorite bread with this but you could do biscuits or whatever you like. Enjoy.
