Ingredients

  • 1 lb. ground beef
  • 1/4 tsp. salt
  • 1 (26 to 30 oz.) jar spaghetti sauce
  • 2 (14 1/2 oz.) cans diced tomatoes
  • 1/4 tsp. red pepper
  • 1 (15 oz.) carton part skim Ricotta cheese
  • 1 (10 oz.) pkg. frozen chopped spinach, fully thawed
  • 1/4 c. grated Parmesan cheese
  • 1 egg, beaten
  • 10 uncooked lasagna noodles
  • 1 1/2 c. Mozzarella cheese

Method

  • Heat oven to 375°.
  • Brown ground beef and drain.
  • Season beef with salt; stir in spaghetti sauce, tomatoes and red pepper.
  • Set aside.
  • In another bowl, combine Ricotta cheese, spinach, Parmesan cheese and egg.
  • In a 13 x 9-inch or bigger pan, spread 2 cups beef sauce over bottom.
  • Arrange 4 noodles lengthwise in single layer.
  • Place noodles and press into sauce.
  • Spread entire cheese mixture over noodles; sprinkle with 1 cup Mozzarella cheese and top with 1 1/2 cups beef sauce.
  • Be sure to cover all the noodles with sauce.
  • Layer noodles and cheese and beef sauce!
  • Cover noodles!
  • Tent with foil.
  • Cook at 375° for 45 minutes.
  • Let stand 15 minutes.
  • Serve !
