- 1 lb. ground beef
- 1/4 tsp. salt
- 1 (26 to 30 oz.) jar spaghetti sauce
- 2 (14 1/2 oz.) cans diced tomatoes
- 1/4 tsp. red pepper
- 1 (15 oz.) carton part skim Ricotta cheese
- 1 (10 oz.) pkg. frozen chopped spinach, fully thawed
- 1/4 c. grated Parmesan cheese
- 1 egg, beaten
- 10 uncooked lasagna noodles
- 1 1/2 c. Mozzarella cheese
Method
- Heat oven to 375°.
- Brown ground beef and drain.
- Season beef with salt; stir in spaghetti sauce, tomatoes and red pepper.
- Set aside.
- In another bowl, combine Ricotta cheese, spinach, Parmesan cheese and egg.
- In a 13 x 9-inch or bigger pan, spread 2 cups beef sauce over bottom.
- Arrange 4 noodles lengthwise in single layer.
- Place noodles and press into sauce.
- Spread entire cheese mixture over noodles; sprinkle with 1 cup Mozzarella cheese and top with 1 1/2 cups beef sauce.
- Be sure to cover all the noodles with sauce.
- Layer noodles and cheese and beef sauce!
- Cover noodles!
- Tent with foil.
- Cook at 375° for 45 minutes.
- Let stand 15 minutes.
- Serve !
