Ingredients
- 500g chickpeas
- 1.5 tbs soda
- 750ml cold water
- 2 tsp salt
- 300ml Tahini (280g)
- 200ml lemon juice (200g)
- 1 clove garlic well mashed in salt
Method
- Soak chickpeas overnight with half of the soda
- Take chickpeas out of water, wash, add cold water & remainder of soda - heat and skim foam - reduce heat for 2 hours
- Mash garlic with salt - drain chickpeas and stir onto mashed garlic - blend mixture - gradually add tahini and lemon juice- run entire mixture through fine strainer
