Ingredients

  • 500g chickpeas
  • 1.5 tbs soda
  • 750ml cold water
  • 2 tsp salt
  • 300ml Tahini (280g)
  • 200ml lemon juice (200g)
  • 1 clove garlic well mashed in salt

Method

  • Soak chickpeas overnight with half of the soda
  • Take chickpeas out of water, wash, add cold water & remainder of soda - heat and skim foam - reduce heat for 2 hours
  • Mash garlic with salt - drain chickpeas and stir onto mashed garlic - blend mixture - gradually add tahini and lemon juice- run entire mixture through fine strainer
