Ingredients

  • 1/2 cup all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 cup dessicated coconut
  • 2 cups milk
  • 15 ounces crushed pineapple drained
  • 4 eggs lightly beaten
  • 1/2 cup butter melted
  • 1 ounce sliced almonds
  • 2 tablespoons honey
  • 2 teaspoons ground cinnamon
  • ice cream to serve

Method

  • Preheat oven to 350°F. Lightly grease a 9 1/2 inch pie dish.
  • Combine flour, sugar and coconut. Whisk together remaining ingredients then mix into dry ingredients until combined. Transfer to prepared pan and bake for 40-45 mins, until firm and golden. Serve warm with ice cream.
