Ingredients

  • 6 medium sized potatoes
  • 2 eggs
  • 3/4 c. flour
  • 1/2 c. bread crumbs
  • 1/4 tsp. nutmeg
  • salt
  • 1/4 lb. butter
  • 1/2 c. bread crumbs or cracker meal

Method

  • Boil potatoes in jackets, skin and mash.
  • Spread to dry out moisture.
  • Put them in large bowl and add 2 level teaspoonfuls salt.
  • Make hollow and break into this two eggs.
  • Sift in flour, add cracker meal and nutmeg.
  • Mix and form into dry balls (if too wet, add more cracker meal).
  • Drop small balls into boiling, salted water.
  • When these potato balls come to surface of water, allow to boil 3 minutes.
  • Center on platter and add dressing made as follows:
  • Melt butter in frying pan; add bread crumbs.
  • Brown and spread on potato balls.
  • Makes 18.
