Ingredients

  • 3 medium avocados, ripe - soft to touch, but not stringy
  • 1 small tomato
  • 1/2 lemon
  • 1T ground cumin
  • 2-3T soy sauce
  • 8oz sour cream (low fat or regular OK)
  • a few drops Tabasco sauce

Method

  • Peel avocados, remove seeds and mash in medium bowl
  • Dice tomato and fold into avocado mash
  • Hand-mix in juice of 1/2 lemon and 3T soy sauce
  • Add cumin to taste, mix in
  • At this point, you have a good, traditional, somewhat chunky guacamole.
  • It's not hot, but not at all bland - good flavor.
  • If you want a smoother guacamole, gradually mix in the sour cream, tasting frequently.
  • You may want to add more cumin and soy sauce (or salt) to taste.
  • If you want some heat in your guacamole, mix in a few drops of Tabasco to taste.
  • This gives a "smooth" heat; if you use chopped peppers, you'll get "cool" guacamole with occasional very hot pieces of pepper.
  • Be careful not to over mix; too smooth and it feels like commercial dip!
