Ingredients

  • Marinade
  • 1/4 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 tablespoon VEGEMITE
  • 2 cloves garlic, crushed
  • few drops Tobasco sauce
  • Skewer
  • 500g lamb fillets or backstraps, cut into cubes Safeway 1 lb For $5.99 thru 02/09
  • 1 red capsicum, cut into 2cm chunks
  • 1 yellow capsicum, cut into 2cm chunks
  • 2 red onions, cut into eighths
  • 2 small zucchini, cut into thick slices
  • green salad, for serving
  • garlic bread, for serving

Method

  • Combine the marinade ingredients in a bowl then add the lamb and allow to marinate for 2 hours or overnight.
  • Remove the lamb from the marinade and reserve.
  • Thread the lamb and vegetables alternately onto 8 skewers.
  • Barbecue the skewers over a medium heat, basting occasionally with reserved marinade for 8-10 minutes or until cooked to your liking.
  • Serve immediately with a green salad and garlic bread .
