Ingredients
- 1 c. persimmon pulp, mixed with 1 tsp. baking soda
- 1 egg
- 1 c. sugar
- 1/2 c. oil
- 1 3/4 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. cloves
- 1 c. chopped nuts
- 8 oz. chopped dates (optional)
Method
- Preheat oven to 350°.
- Mix pulp and soda.
- In a large bowl lightly beat egg.
- Stir in sugar, oil and pulp.
- Mix dry ingredients separately and then add to wet ingredients.
- Add nuts and dates.
- Spread in greased 10 x 15-inch pan.
- Bake at 350° for 25 minutes.
- Cool 5 minutes and spread on glaze.
