Ingredients

  • 1 c. persimmon pulp, mixed with 1 tsp. baking soda
  • 1 egg
  • 1 c. sugar
  • 1/2 c. oil
  • 1 3/4 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 c. chopped nuts
  • 8 oz. chopped dates (optional)

Method

  • Preheat oven to 350°.
  • Mix pulp and soda.
  • In a large bowl lightly beat egg.
  • Stir in sugar, oil and pulp.
  • Mix dry ingredients separately and then add to wet ingredients.
  • Add nuts and dates.
  • Spread in greased 10 x 15-inch pan.
  • Bake at 350° for 25 minutes.
  • Cool 5 minutes and spread on glaze.
