Ingredients
- 1 1/2 c. sugar
- 6 1/2 Tbsp. cornstarch
- 1/2 tsp. salt
- 2 Tbsp. butter or oleo
- 3 eggs yolks
- 2 c. water
- 3 medium lemons (juice and grated rind)
Method
- Blend sugar, cornstarch and salt together.
- Stir in water and cook over medium heat until thick.
- Remove from stove and add beaten yolks, juice and rind (add to taste), and butter.
- Cook for a few minutes longer until thickens again.
- Pour into baked pie shell and cover with meringue.
