Ingredients

  • 1/3 c. unsweetened applesauce
  • 2/3 c. apple juice concentrate
  • 1/3 c. fructose
  • 1/3 c. oil
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. lemon peel
  • 2 c. flour
  • 2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1 c. grated zucchini
  • 1/2 c. chopped pecans

Method

  • Preheat oven to 350°.
  • With electric mixer, combine applesauce, apple juice concentrate, fructose, oil, eggs and lemon juice.
  • Beat until well blended.
  • In a separate bowl, combine lemon peel, flour, baking powder, salt, baking soda, nutmeg and cinnamon.
  • Add zucchini and nuts to dry mixture.
  • Add batter to dry mixture and blend well.
  • Pour into 9 x 5 x 3-inch pan which has been coated with vegetable cooking spray.
  • Bake for one hour or until inserted knife comes out clean.
  • Yields 16 slices.
  • Each slice contains 171 calories (41% from fat).
