Ingredients

  • 1 teaspoon Dijon-style mustard
  • 1/4 teaspoon Mayonnaise
  • 1 tablespoon Vinegar
  • 3 cloves Garlic
  • 5 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 3 pinches Black pepper

Method

  • Smash garlic cloves; peel but leave mostly whole.
  • Combine all ingredients in a jar with a tight-fitting lid. Just before serving remove garlic cloves, then shake vigorously to emulsify. Pour over salad and toss well.
  • Note: The format wouldn't allow me to say several grinds of fresh pepper, so don't take the 3 pinches too seriously.
