Ingredients

  • 1 whole Courgette (zucchini), Medium
  • 2 Tablespoons Fresh Lemon Juice
  • 4 Tablespoons Olive Oil
  • 1 teaspoon Garlic Salt
  • 1/2 teaspoons Paprika
  • Black Pepper To Taste
  • 3/4 ounces, weight Pine Nuts
  • 2 Tablespoons Fresh Basil, Finely Chopped
  • 1 ounces, weight Goat Cheese Crumbled

Method

  • Top and tail the courgette, and then slice it into very thin strips with a vegetable peeler or mandoline (use the thinnest setting). Set aside.
  • In a large bowl, mix together the lemon juice, olive oil, garlic salt, paprika and plenty of black pepper, and then add the courgette strips. Mix well and leave it to marinate for 10 minutes.
  • Serve the marinated courgette topped with the pine nuts, chopped basil and crumbled goat's cheese.
