Ingredients
- 1/3 c. oil
- 1/3 c. vinegar
- 2 Tbsp. minced peppers
- 1 Tbsp. chopped parsley
- 1/2 tsp. salt
- 3 c. florets of broccoli and cauliflower
- 1 1/2 c. cooked kidney or garbanzo beans
- 2 c. sliced cucumbers
- 1 c. sliced carrots
Method
- In large bowl, mix first 5 ingredients.
- Add next 4 items. Mix gently.
- Cover and refrigerate.
- Makes nearly 2 quarts.
- Use within a week.
