Ingredients

  • 6 corn tortillas
  • 4 eggs
  • 1/4 c. Cheddar cheese
  • 6 slices bacon
  • chopped tomatoes
  • sliced avocado
  • sliced olives
  • salsa
  • sour cream

Method

  • Heat tortillas in 350° oven, about 3 minutes if you like them soft, or 5 minutes if you like them crisper.
  • In the meantime, cook bacon until crisp.
  • Scramble and cook the eggs in a frying pan according to your taste.
  • Place one slice of bacon in each tortilla.
  • Spoon scrambled eggs over bacon.
  • Sprinkle with cheese and your favorite toppings.
  • Roll them up and enjoy!
