Ingredients

  • 1 package (about 5 Oz. Package) Au Gratin Potato Mix
  • 1 can (11 0z. Can) Whole Kernel Corn, Drained
  • 1 can (10 Oz. Can) Diced Tomatoes And Green Chilies (Rotel)
  • 2 cups Water
  • 2 cups Milk
  • 2 cups Processed American Cheese Cubes (Velveeta)

Method

  • In a 3-qt. saucepan, combine au gratin potato mix, corn, tomatoes and water; mix well. Bring to a boil. Reduce heat, cover and simmer for 15-18 minutes or until potatoes are tender.
  • Add milk, cheese, and any optionals (see below) wanted except instant potato flakes. Cook and stir until cheese is melted. Add potato flakes to thicken if desired.
  • Opionals: dash of hot pepper, parsley flakes, mushrooms and/or instant potato flakes (to thicken).
