Ingredients

  • 2 potato's chopped hash brown style
  • 2 tbsp butter
  • 1/4 onion chopped
  • 1/4 green pepper chopped
  • 1 clove garlic chopped
  • 3 eggs beaten
  • 1/4 tsp black pepper
  • pinch salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp curry powder
  • 1/2 cup real bacon bits
  • 1/2 tsp parsley

Method

  • On medium heat Fry the potato's in the butter for few minutes before adding all the spices except curry and parsley
  • When the potato's start to get a little crispy add the chopped peppers onions garlic and curry and continue cooking until onions get soft
  • Add 1/2 the bacon bits on top of the potato's then add the egg mixture over top of the potato's then sprinkle with parsley and add the rest of the bacon over top of the eggs and turn temperature to low and cover ...cook until eggs are done then serve ...( optional )>>you can sprinkle with shredded cheese if you like and cover back until melted
