Ingredients

  • 2-1/4 cups flour
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon grated lemon peel, if desired
  • 1 teaspoon vanilla
  • 1 cup butter or margarine -- softened
  • 8 oz pineapple or mandarin orange yogurt or
  • sour cream
  • 3 each eggs
  • GLAZE frosting
  • 1 cup powdered sugar
  • 1 to 2 Tblspns lemon juice

Method

  • Grease and flour bundt or tube pan. Preheat oven to 325*F.
  • Combine all ingredients in large mixing bowl. Blend at low speed. Beat 3 minutes at medium speed. Pour into prepared pan.
  • Bake at 325*F for 60-70 minutes until top of cake springs back when lightly touched in center.
  • Cool 15 minutes in pan; remove and cool completely.
  • GLAZE: Combine powdered sugar and lemon juice.
