- 2-1/4 cups flour
- 2 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon grated lemon peel, if desired
- 1 teaspoon vanilla
- 1 cup butter or margarine -- softened
- 8 oz pineapple or mandarin orange yogurt or
- sour cream
- 3 each eggs
- GLAZE frosting
- 1 cup powdered sugar
- 1 to 2 Tblspns lemon juice
Method
- Grease and flour bundt or tube pan. Preheat oven to 325*F.
- Combine all ingredients in large mixing bowl. Blend at low speed. Beat 3 minutes at medium speed. Pour into prepared pan.
- Bake at 325*F for 60-70 minutes until top of cake springs back when lightly touched in center.
- Cool 15 minutes in pan; remove and cool completely.
- GLAZE: Combine powdered sugar and lemon juice.
