Ingredients

  • 3 lb oxtail
  • 4 medium potato cut into cubes
  • 4 carrot cut into 1 inch pieces
  • 2 chayote cut into cubes
  • 1 can chipotle chile
  • 2 medium roma tomato
  • 2 clove garlic
  • 1 salt to taste
  • 1/2 bunch cilantro
  • 1 small onion peeled and cut into four
  • 3 bay leaves

Method

  • add oxtail, and onion to pot of boiling water.
  • Cook for 30 minutes.
  • in blender add 4 of the chiles out of the can and all of the sauce that is in the can, garlic and tomato.
  • Blend until smooth.
  • Add salsa from blender to pot with meat, bay leaves and salt to taste, cook 10 minutes more.
  • Add all veggies and cook until veggies are fork tender.
