Ingredients
- 60 g (½ cup) self-raising flour
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 1 small egg
- 125 ml (1/2 cup) milk
- vegetable oil, for deep-frying
- 18 oysters, shucked
Method
1. Sift the flour, cayenne pepper, paprika and a pinch of salt into a bowl.
2. Fill a deep-fat fryer or large saucepan one-third full of oil and heat to 180°C (350°F), or until a cube of white bread dropped into the oil turns golden brown in 15 seconds. Pat dry the oysters, dip into the batter, and deep-fry in batches for 1-2 minutes, or until golden brown. Drain on crumpled paper towels and serve immediately either as they are or sandwiched between crusty bread.
