  • 1/3 cup reserved bacon fat
  • 1/4 cup olive oil
  • 1/4 tsp maggi seasoning, this is not necessary but I do like the flavor
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 3 1/2 tbsp all-purpose flour
  • 3 1/4 cup chicken broth


  • In a large skillet over medium high heat add oil and bacon fat.
  • Once bacon fat has melted, add flour and whisk in with the fats.
  • Cook this for several minutes until flour turns a golden brown.
  • Slowly pour in broth.
  • Whisk vigorously to incorporate with the roux.
  • Bring to a boil and lower heat to medium.
  • Add in all the seasonings.
  • Mix and taste to see you you need to adjust any to your taste.
  • Cook another four minutes.
  • Pour over chicken or pork.
  • Great over ham.
