Ingredients
- 1/3 cup reserved bacon fat
- 1/4 cup olive oil
- 1/4 tsp maggi seasoning, this is not necessary but I do like the flavor
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 3 1/2 tbsp all-purpose flour
- 3 1/4 cup chicken broth
Method
- In a large skillet over medium high heat add oil and bacon fat.
- Once bacon fat has melted, add flour and whisk in with the fats.
- Cook this for several minutes until flour turns a golden brown.
- Slowly pour in broth.
- Whisk vigorously to incorporate with the roux.
- Bring to a boil and lower heat to medium.
- Add in all the seasonings.
- Mix and taste to see you you need to adjust any to your taste.
- Cook another four minutes.
- Pour over chicken or pork.
- Great over ham.
